The Full Story
About
The first time I baked a cheesecake; I enlisted the help of my father as my husband of 2 years wanted a Butterfinger cheesecake and I couldn't find one in any store. So, we made one. circa January 2004. I'd like to say I've been baking them ever since, but that's not true. I started baking them again in 2014 to pay for my running a half marathon or longer in all 50 states while spreading awareness to the veteran suicide rate. I completed the majority of the races with the nonprofit 22 Too Many. I completed a fellowship in entrepreneurship with the nonprofit Dog Tag, Inc; based out of DC. I was in their 5th cohort based out of Chicago in partnership with Loyola University. My cannoli cheesecake's roots were formed with my baking group with this fellowship. Now, I am setting up at the local farmer's market and other small events in St. Charles MO. People order and pick up from my house until I can land a perfect location on Main Street St. Charles. You can also swing by Trolley Stop Bakery located off 141 and Olive at 67 Forum Shopping Center to pick up a refreshing cheesecake mini. The goal is to leave a legacy for our daughters and their families if that is the route they choose.
